The Story Behind Our Colorful French Brioche Buns


Creating colorful French brioche buns may look simple, but achieving bright, consistent colors while preserving the taste and texture of a traditional brioche required months of development.

Our ambition was clear from the beginning: to create mini French brioche buns with the same visual impact that colorful macarons can bring to a buffet or reception. We wanted bold, vibrant colors, both inside and out, without compromising the quality of the finished product.

Working with natural colorings presented several technical challenges. Brioche dough reacts to heat during baking, while the egg glaze naturally browns on the surface. Achieving a vivid color inside the bun while maintaining an equally attractive exterior therefore required extensive testing and adjustments to the recipe and baking process.

 
 
 

Bright Colors Without Compromising on Brioche Quality

Pastel shades were not what we were looking for. Our goal was to develop distinctive red, green, yellow and orange brioche buns that would immediately stand out on a buffet, at a cocktail reception or as part of a creative catering presentation.

The first trials were challenging. Some buns developed the desired color inside while becoming too brown on the outside. Others looked attractive but did not yet meet the standards we expected from our brioche range.

This was when Malika, our production manager, brought all her experience and determination to the project. Numerous tests with natural colorings, adjustments to recipes and repeated baking trials were necessary to find the right balance.

From Product Development to a Successful Professional Range

After months of experimentation, the work paid off. We succeeded in producing the vibrant red, green, yellow and orange shades we had originally imagined while retaining the soft, buttery texture expected from our French brioche buns.

The result became much more than a visual experiment. Our colorful mini brioches developed into a distinctive range designed for professional customers looking to create original presentations without sacrificing taste or product quality.

Today, these colorful brioche buns can be used for mini burgers, cocktail receptions, buffets, catering events and creative food presentations. Their small format and distinctive appearance give chefs and caterers another way to differentiate their menus and surprise their guests.

Produced in France by The Savoureuse, they reflect the same approach we apply to our entire brioche range: combining French know-how, careful product development and solutions adapted to the requirements of food professionals.
